Mushroom Boost Fajita

High protein mushroom fajitas are a quick, easy and flavorful weeknight meal. Ready in minutes.

Ingredients

Mushroom Fajitas

  • 1 pkg ulivit Mushroom Boost Bites (37 g)

  • 1 red bell pepper and 1 medium red onion sliced (or 2 cups frozen fajita mix (170 grams))

  • quacamole

  • fresh tortillas or lettuce wraps

    Fajita Spice:

  • 1/2 tablespoon chili powder

  • 1/2 tablespoon ground cumin

  • 1 teaspoon garlic powder

  • 1/2 teaspoon paprika

  • 1/2 teaspoon oregano

  • 1/2 teaspoon salt

  • 1/4 teaspoon pepper

OPTIONAL FOR SERVING

  • your fav cheeze, salsa, pico de gallo, chipolte, avocado, quacamole or sour cream if you want to be extra.

Instructions

  1. Soak. Add 1 cup hot water, bites and mushroom boost seasonings to a bowl. Stir, until all the bites are saturated. Let sit for 3 minutes.

  2. Sizzle. Heat 2 tbsp oil on non stick pan over med-high heat. Add seasoned bites and water and cook until water is absorbed and bites get a bit golden and crunchy. Add fajita spices above or your favourite fajita mix. Add pepper and onion and cook until soft.

  3. Serve with rice, quoinoa, fresh tortillas or lettuce wraps. Add salsa, mayo siracha, chipolte or jalapenos.
